The Method, No Madness
Firstly sieve the flour into a bowl and chuck in your pinch of salt. In a jug, crack your egg and ensure you don’t get any shell in there. If you do, use another bit of shell to get it out, they will attach to each other easier than to a spoon! Mix it together and then pour in your milk and mix again. Add this into your bowl, stirring together until you have a smooth, velvety and runny batter. Leave to stand for 30 minutes.
Whilst your batter is standing, get a muffin tin or bun tin and add a drizzle of sunflower oil or olive oil into each section. Pop this in the oven at about 220°C and when it starts smoking, bring back out and pour in your batter before returning to the oven. Leave this for 15 – 20 minutes until they have risen and are golden brown. Do no open your oven until you are ready to take them out, simply keep an eye on them through the door and switch the oven light on to help. Serve immediately.
Modify For You
There are variations to the recipe should you wish. Instead of using oil, use some fat from the meat you’re roasting for Sunday dinner. It will give a fantastic flavour to your Puddings.
